1 whole chicken (15 - pound)
1 cup of TricNic ® Jerk Marinade
2 tablespoons of Tricnic Jerk Seasoning
1 teaspoon of olive oil
First removing the backbone from the chicken using a pair of kitchen shears or a sharp knife. Transfer the chicken to a bowl and rinse in lime water, and pat dry with paper towels. Transfer to a baking sheet and flatten it down to spread the chicken out as much as possible.
Pour the marinade over the chicken. Cover with plastic wrap and marinate in the fridge for at least 4 hours or overnight.
Preheat the oven to 400°F (200°C).
Remove the plastic wrap, add olive oil, and cover with foil, roast the chicken for 50 minutes, remove chicken and baste with its own juices, place chicken back in the oven, and bake until golden brown. Rest for 10 minutes on a cutting board before carving and serving. Enjoy!
