You definitely want to try this incredible jerk chicken Quesadillas packed with juicy jerk chicken, mango pineapple salsa, onions, sweet corn, and lots of melty cheese. It's so easy to make, and it tastes amazingly good. You can throw it together in a matter of a few minutes.
1 pound chicken breasts (cut into bite-sized pieces)
1 tablespoon oil
4 tablespoons TricNic jerk marinade mild or hot
½ cup Mango pineapple salsa
1 tablespoon green onions
½ cup lettuce, chopped
¼ cup sweet corn
2 cups shredded, melting cheese
4 large flour tortillas
Cut chicken breasts into small bite-sized pieces. Heat oil over medium-high heat in a large heavy-duty pan. Season the chicken breasts with jerk marinade; let marinate for around 5-10 minutes add marinate chicken to the pan. Sautee 8-10 minutes or until the chicken is cooked through. Remove the chicken from the pan and set it aside.
To the same pan, add ½ teaspoon oil and a tortilla, top with a handful of shredded cheese, 1/4th the chicken, salsa, onion, and corn, then with more cheese. Fold the tortilla and cook on both sides until crispy and golden. Remove from the pan.
To serve: Slice tortillas in half or thirds and serve with jerk mayo, lettuce, and salsa.
