fresh thyme

1 cup scallions (green onions) sliced (divided into two)

1 scotch bonnet pepper (adjust to suit taste buds)

10 pimento seeds

1/2 tbsp salt

1/2 tbsp black pepper

1 tbsp all-purpose seasoning

1 tsp garlic powder

Step1

Season goat with salt and black pepper, all-purpose seasoning, jerk seasoning, 4 tablespoons of TricNic ® Jamaican Spicy Curry Paste, and garlic powder. Add pimento, scotch bonnet pepper, garlic, onion, 1/2 cup scallions, and 1 tablespoon of oil. Set aside in the refrigerator for a minimum of 4 hours, overnight for best results.

Step2

In a large pot, heat 1 tbsp oil over medium heat, until hot, add 1 tbsp TricNic ® Jamaican Spicy Curry Paste stir for about 1 minute.

Step3

Add the goat meat stirring for 30 seconds, cover for 10 minutes to spring its own liquid. Then add 2 cups of water to cover the goat, cover, and cook for 30 minutes.

Check and see how much water is in the pot, cover and continue cooking for 30 minutes. Check it again, add half of the onions, pour in 2 more cups of water to cover the goat, and continue cooking for 30 minutes.

Step5

Add 2 more cups of water and continue cooking for 35 minutes.

Step6

Add the remaining onions, scallions, and 3 cups of water, add fresh thyme, this will finish cooking the goat. Cover and bring to a boil, then simmer on medium heat for 45 minutes or until the goat is tender and gravy thickened. Enjoy!
