2 lbs Chicken (3 leg quarters) bone-in skin off
4 tbsp TricNic ® Curry Paste
1 tbsp all-purpose or Chicken seasoning
1 tsp each salt and black pepper
2 cloves garlic (minced)
1/2 medium onion (chopped)
1/4 cup scallions
3 sprig of fresh thyme
1 small scotch bonnet pepper (chopped)- (optional)
2 tbsp Cooking oil
2 cups warm water
1 lime to rinse the chicken
Remove the skin (if there is any) from the chicken and cut it into small pieces. (You should get about 12 pieces ). Rinse the chicken in cold water with the juice from the lime. Drain away all the excess water from the chicken. Dry with a kitchen towel.
In a bowl, add the chicken, chicken seasoning, salt, and black pepper, garlic, onion, scallions, and TricNic ® Curry Paste. Mix everything together and refrigerate overnight so the chicken can marinate (24 hours).
In a pot add the cooking oil and put it to hot on medium heat.
Add the seasoned chicken to the oil and stir well. Let the chicken cook until lightly brown on all sides. Cover and cook for about 5 minutes.
Check and stir for about 1 minute. Add 2 cups of water enough to cover the chicken in the pot. And 2 tbsp more onions, scallions, and fresh thyme. Cover and leave to cook for 35-40 minutes, until the chicken is cooked all the way through and the water is reduced to a curry gravy.
Serve with your favorite side dish. Enjoy!
