Ingredients:
1 large head(s) cauliflower, cored, broken into large-ish florets, florets sliced into 1/2-inch slices
1/3 cup extra virgin olive oil
1 fresh lemon (juice)
1 shallot, peeled, thickly sliced.
3 cloves garlic, sliced
2 tablespoons TricNic ® Curry Paste
1/4 teaspoon salt
1/4 teaspoon black pepper
Step 1
Pre-heat oven to 425°F. With a rack on the top third of the oven, lightly grease the baking pan with cooking spray or oil.
Step 2
Add the cauliflower, oil, lemon juice, salt, black pepper, onion, and garlic slices to a large bowl. Add TricNic ® Curry Paste and toss to coat. Spread the cauliflower and onion slices on the baking sheet in a single layer.
Step 2
Roast in the oven at 425°F for 30 minutes until well browned. Turn halfway through the cooking, for more even cooking. Enjoy.
