Ingredients:
1 large head(s) cauliflower, cored, broken into large-ish florets, florets sliced into 1/2-inch slices
1/3 cup extra virgin olive oil
1 fresh lemon (juice)
1 shallot, peeled, thickly sliced.
3 cloves garlic, sliced
2 tablespoons TricNic ® Curry Paste
1/4 teaspoon salt
1/4 teaspoon black pepper
Step1
Pre-heat oven to 425°F. With a rack on the top third of the oven. lightly greased baking pan with cooking spray or oil.
Step2
Add the cauliflower, oil, lemon juice, salt, black pepper, onion, and garlic slices to a large bowl, add TricNic ® curry paste and toss to coat. Spread the cauliflower and onion slices on the baking sheet in a single layer.
Step3
Roast in oven at 425°F for 30 minutes until well browned. Turn halfway through the cooking, for more even cooking. Enjoy!
