8 chicken leg quarters bone-in, skin on
2 cups of TricNic ® Jerk BBQ Sauce
1/2 cup TricNic ® Jerk Dry Rub
1 tablespoon garlic oil or olive oil
Lime and vinegar to rinse the chicken
Preheat oven to 375 degrees F.
Coat the chicken on all sides with garlic oil and season with salt, black pepper, and chicken seasoning or you can use your favorite spice rub.
Cover and refrigerate overnight. Bring chicken to room temperature before proceeding.
Spray a baking tray with cooking spray.
Place the chicken skin side up on a rimmed baking sheet. Bake for 40 minutes.
Remove the chicken from the oven, and pour the juices off. Turn the chicken over, and coat the chicken with TricNic ® Jerk Barbecue Sauce using a basting brush. Use a tong to flip the chicken over. Baste the other side of the chicken, and place it back in the oven for 10 minutes.
Remove from oven, baste more TricNic ® Jerk barbecue sauce on top, only the skin side at this point.
Move the oven rack up and broil the chicken for 3-4 minutes, until it's crispy. Keep your eyes on them you don't want them to burn.
