1 whole chicken or 6 leg quarters
1/½ cup TricNic ® Jerk Marinade
Cut the chicken in half or into quarters. Wash chicken with lime or vinegar about 3 times, then pat dry with paper towels. Add the chicken to a large bowl, pour the marinade over the chicken and turn to coat. Cover and refrigerate overnight. Bring the chicken to room temperature before proceeding.
Prepare a grill for indirect cooking. Place the marinated chicken skin-side down, over direct heat, and cook until dark brown grill marks appear (about 3 minutes). Turn the chicken over and cook for another 3 minutes. Move the chicken to the indirect heat part of the grill and cook, skin side up, until the skin is crisp and cooked through, 45 to 60 minutes. (Temperature 160 °F) Transfer the chicken to a platter. enjoy!
